We all scream for nice cream!
When I first heard about Nice Cream – which is basically a vegan version of ice cream, made with frozen bananas, I thought Nah, that is too good to be true. But, in all honesty, I absolutely love it. It is the exact consistency of ice-cream, so refreshing and yummy.
The main ingredient, as mentioned, is frozen banana.
To freeze bananas, peel and chop first. This is a great use for overripe or excess number of bananas. If you see overripe bananas reduced in the supermarket, snap them up and freeze them. This is perfect and makes nice cream a really, really budget friendly treat.
You will need at least 2 frozen bananas, depending on the size of your blender, to make each portion.
Your blender needs to be powerful enough to process frozen bananas. Some smoothie makers are not, and you will damage your motor if you try. I got my blender from my Mam, she had a really old one she wasn’t using and it was just taking up space for her. Ask around friends and family before heavily investing in a food processor.
To make the nice cream, blend the frozen bananas until they reach the consistency of dairy ice cream. That’s it! You may need to pause after a minute or two and using a spatula, scrape the mixture from the sides, before blending again.
That’s your basic nice cream and now the fun starts. To make chocolate nice cream, per 2 frozen bananas add:
- 1 tablespoon cacao powder
- 1 tablespoon maple syrup
- 1 teaspoon cacao nibs before the last blend
